Coffee · the second pour

Why the second pour?

The first pour (the bloom) just wets the coffee so it can let go of gas. The second pour is where the flavour really opens up: slow, even circles, nothing rushed. It’s our favourite moment of the morning, so we named the whole thing after it.

  1. 0:00SiftSift the matcha into a warm bowl. Lumps out, calm in.
  2. 0:10PourAdd the water, a little off the boil.

  4. 0:48Sit downFine foam on top. Lift the whisk from the middle. That is it.

Matcha · the W

Whisk in a W, not an O.

Stirring in circles just spins the tea around. A quick W from the wrist, back and forth, folds air in and builds the fine foam. About thirty seconds. Then lift the whisk out from the middle.
