The first cup is for waking up. The second is the one you actually taste.
That’s the whole idea. Most mornings the first cup happens on the move. The second one is different: you sit down, you pour slowly, you notice the jasmine or the umami. We make things for that cup.
So the menu is short on purpose. One ceremonial matcha, stone-ground, from Uji in Kyoto. One washed coffee from Yirgacheffe. And the two together, for people who want both moods in the cupboard.
